When I was about 11 years old Mimi let me make pancakes by myself. This was not a good idea, I ended up adding 4 tablespoons of baking soda [or powder]. This resulted in 4 gallons of pancake batter. 4 gallons you exclaim!
Yes. Because of our financial position at that time it was better to make enough pancake batter to use the baking soda/powder. I don’t remember how long it took us to eat that batch of pancake batter; but it seems like it took weeks.
Ironically, I still love pancakes & when in college I ate them every other day. Little Man & Lauren love the family recipe and we have pancakes on a regular basis. In fact, blueberry pancakes seem to happen regularly around here [like every time we make pancakes].
